Meal Planning

My meal plans are simple because my family is simple. Out of the 5 of us, 4 are flexible and the other (my husband) is strictly meat and potatoes. Like, I can't tell him there are mushrooms in "Cream of Mushroom" soup. How crazy is that!

Because meal planning for me is like pulling wisdom teeth without heavy sedation, I'll share with you what is on the menu for the day. Again, please feel free to share anything on your meal plan.

Basic Lasagna
Garlic Bread
Broccoli

The recipe for Basic Lasagna is so simple and can be modified to your liking. No bake lasagna pasta (I use Barilla), pasta sauce of your choice (I use Prego), ground turkey or beef mixed in after cooking, chopped onions, shredded cheese. That's all the ingredients for the lasagna! You can modify the base recipe however you like, this version works for quick meals.

Today is looking like Pizza or "Every Man for em'Self" (this is actually an entry on our meal plan calendar).


Thursday

This day was a challenge because I did NOT feel like cooking. I repeat...I did NOT feel like cooking!!!!!


Chicken Enchilladas
  • Shreded Chicken (I boiled mine just to save time, in heavily seasoned water)
  • Rice (you can use plain white rice, Spanish rice, or whatever you want)
  • Shredded Lettuce
  • topped w/Rotel Diced Tomatoes
Optional items: cilantro, onions, salsa, sour cream


Super easy!! Just follow the directions on the enchillada sauce can. Voila! A no-brainer.


Wednesday

Basic Chicken Fettuccine
  • Egg Noodles (you can use the pasta of your choice, this is not the Olive Garden)
  • Chopped chicken breasts (I shred it, sometimes chopping makes the meat tough if you don't cut it on the grain a certain way)
  • Cream of Mushroom soup
  • Milk
  • Pepper
  • Salt (I use Kosher, but you can use what you have)
  • Chopped onion
  • Shredded Parmesan cheese (optional)
Cook the chicken breasts however you like (I boil my chicken just because its difficult to cook with a toddler and infant fighting for attention. Plus I season the water so I won't have to season the chicken later.).

This entire recipe is "to taste" nothing is set in stone about how much to use of what. Experiment with it. Most of the ratios of the liquid items depend on how much pasta you are cooking. Look for the consistency and taste you feel comfortable eating.
